Chocolate Pudding
Ingredients
- STEVITA ORGANIC SPOONABLE STEVIA - 9 TEASPOONS
OR SIMPLY-STEVIA PURE STEVIA - 1 TSP.
OR STEVITA ORGANIC SPOONABLE STEVIA - 18 PACKETS - COCOA POWDER - 1/3 CUP
- CORNSTARCH - 3 TABLESPOONS
- MILK - 3 CUPS
- EGG YOLKS - 4
- BUTTER - 1 TABLESPOON
- VANILLA - 2 TEASPOONS
Instructions
In a heavy saucepan, combine stevia, cornstarch, and cocoa. Add milk; stir well. Over medium heat, stirring constantly, cook till mixture is thickened and bubbly. Continue cooking and stirring for 1 minute more. Remove from heat. Stir about 1 cup of the hot milk mixture into the beaten egg yolks. Add all of the egg mixture to the remaining hot milk mixture in the saucepan. Stirring constantly, cook till nearly boiling. Do not boil, or mixture may curdle. Reduce heat; continue cooking and stirring 3 minutes more. Remove from heat. Stir in butter and vanilla. Pour pudding into a bowl. Cover the surface with clear plastic wrap. Chill in refrigerator at least 2 hours before serving.
