Fast and Easy Chocolate Mousse

A fluffy dessert for when you want something easy to make and easy to dress up. Adding rum, Kahlua, or instant coffee complements the chocolate, while longer chill times result in a denser texture.
Makes 4 servings.
Chill time: 30 minutes
- Add 1 tablespoon of cold water to a small bowl, then sprinkle gelatin over it. After blooming gelatin for 5 minutes, add 1 tablespoon of boiling water and stir until gelatin is completely dissolved and mixture is clear. Set aside to cool slightly.
- Stir together Stevita and cocoa powder in a medium bowl. Add whipping cream and vanilla extract, then whip at medium speed using a hand mixer until stiff peaks form. Scrape the bottom of the bowl occasionally to make sure everything is incorporated.
- Pour in gelatin mixture and whip until well blended. Spoon into serving dishes, then chill in the refrigerator for at least 30 minutes.
