Frozen Fruity Cream Pops

Ice pops like these combine the most refreshing parts of fruit and cream, making them a perfect treat on a hot day. Your yield may vary depending on the size of your molds.
- Sprinkle gelatin over ¼ cup cold water in a small saucepan and let stand 5 minutes. Stir gelatin and water over low heat until gelatin is dissolved, then allow mixture to cool to room temperature.
- Combine evaporated milk, Stevita to taste, vanilla extract, and cooled gelatin in a large bowl. Beat mixture with an electric mixer until soft peaks form. When you lift the mixer, you should see peaks that flop over slightly.
- Fold in crushed or diced fruit, if using, then spoon mixture into freezer molds or 3-ounce paper cups. If using paper cups, cover them with foil and insert wooden sticks through foil into mixture.
- Freeze until firm.
