Light and Airy Meringue Cookies

Low-carb and nonfat meringue cookies are an elegant way to satisfy your sweet tooth. The cream of tartar strengthens the egg whites to help these treats retain their shape, and vanilla extract adds a little flavor punch!

Makes about 45 cookies.

  1. Preheat oven to 350°F. Mix Stevita, powdered milk, and cream of tartar in a small bowl.
  2. In a separate bowl, begin whipping egg whites. Once foamy, slowly pour in the dry ingredient mixture while still whipping the egg whites.
  3. Continue whipping until glossy with stiff peaks that hold their shape when you lift your whisk (and don’t flop over). This can take up to 10 minutes depending on what tools you use. Be careful not to over-beat.
  4. Add vanilla extract and whip until just blended.
  5. Place half-teaspoon-size drops on greased parchment paper; you can use a pastry bag to pipe the meringue.
  6. Bake until dry all the way through and slightly golden, roughly 25 minutes. Remove from oven and allow to cool completely. Store in an airtight container.
