Peach Butter

Makes 6 cups (twenty-four 2-tablespoon servings).
Ingredients
- PEACHES, PEELED, PITTED AND SLICED - 3 POUNDS
- WHITE GRAPE JUICE - 3/4 CUP
- GROUND CINNAMON - 1-2 TEASPOONS
- GROUND NUTMEG - 1/2 TEASPOON
- GROUND CLOVES - 1/8 TEASPOON
- STEVTA BLEND - 8 TEASPOONS
OR STEVIOSIDE - 1 TSP.
OR STEVIA - 16 PACKETS
Instructions
In a large, heavy saucepan, combine peaches, juice, spices, and stevia. Stirring occasionally, bring to boiling. cover and simmer until fruit can be easily mashed with a fork (about 15 minutes). Cool slightly. puree in blender or food processor. Return to saucepan. Simmer, uncovered, over low heat until desired consistency, stirring frequently. (This may take up to 1 hour.) Remove from heat. Transfer to freezer containers or jars, leaving a 1/2-inch head space. place in the refrigerator until cool (about 3 hours). Transfer to the freezer. Store up to 2 weeks in refrigerator or up to 3 months in freezer.
