Single-crust Coconut Oil Pastry

This butter-free pie crust bakes up light and flaky but is a cinch to make.

Makes one 9-inch double-crust pastry or two 9-inch single-crust pastries.

  1. Stir together flour, Stevita, and salt in a mixing bowl.
  2. Combine milk and oil in a measuring cup, then add to flour mixture. Stir together with a fork and form into 2 balls.
  3. Place each dough ball between 2 squares of wax paper and roll into a flattened circle. Once rolled, peel off top paper and flip dough—with other wax paper still attached—into 9-inch pie plates.
  4. Fit dough into plates and remove remaining top wax paper.
