Strawberries and Cream (Cheese) Pie

Instead of strawberries and sweet cream, why not strawberries and tangy cream cheese? This pie has a cool visual effect from the layered strawberries and gelatin sitting on top of the flavored cream cheese filling; it’ll impress any garden party guests (or any party guest). Use ripe, sweet-smelling strawberries for the most intense flavor.

  1. Beat cream cheese, 3 teaspoons or 6 packets of Stevita, and vanilla extract in a small mixing bowl until fluffy. Spread evenly over bottom of Cookie Crust.
  2. Combine cold water, 6 teaspoons or 12 packets of Stevita, and cornstarch in a small saucepan. Bring to a boil, stirring constantly until thickened—about 2 minutes.
  3. Stir in gelatin until it dissolves, then cool for 10 minutes.

Arrange half the slice strawberries over the cream cheese mixture, then spoon half the gelatin mixture over the strawberries. Layer remaining strawberries on top and spoon remaining gelatin mixture over the strawberries.

  1. Refrigerate 2 hours or until pie is set.
