Sugar-free Cream Cheese Key Lime Pie

Bring a little of the Sunshine State right into your own home with this Sugar-free Cream Cheese Key Lime Pie. With minimal baking and prep, our version of the famous key lime pie will become part of your regular dessert rotation. If you can’t find key limes or key lime juice, use whatever lime juice you have on hand. Consider serving with a little Whipped Cream (see index) on top too!
Makes 8 servings.
Chill time: 2 hours
- Combine gelatin and ½ cup whole milk in a small saucepan. Let stand 2 to 3 minutes to soften and bloom. Cook over low heat, stirring constantly, until gelatin dissolves.
- Beat cream cheese until fluffy in a small bowl, then beat in remaining 1 ¼ cups whole milk and gelatin mixture.
- Mix lime juice and Stevita into cream cheese mixture until well combined.
Pour filling into crust and refrigerate until set, about 2 hours.
